Happy Birthday to me!

Made my first ever birthday cake today. Chose the Steam Moist Chocolate Cake from KC. I decided to sandwich it with bananas and chocolate fudge, covered in chocolate fudge too. Wanted to make something like the Banana-Choc Cake from Secret Recipe, but could not find a particular type of non-dairy whipping cream, so had to change my mind.

The Steam cake recipe is not too difficult. Overall, the cake was successful. I was in a good mood as this is the first time I was making such a big cake and the first step (steaming the cake) turned out rather well. The only little flaw the cake had was, the centre top portion was a little hard and dry. Not too sure what was the reason, but it's quite easy to deal with that. I just cut off the top layer to have a "perfect" cake...lol...



The next step was to make the Chocolate Fudge, which was a very long process. I had to stir for about 2 1/2 hrs to reach the consistency which I thought was thick enough. But upon spreading, I found it still runny. So had to chill the fudge before attempting to apply onto the cake. Although in the end I managed to frost it (rather unskillfully), the cake cannot be out of the fridge for too long or the fudge will start to "melt" again! So the photo taking, cake cutting, etc. were done quickly.






Despite the above hiccups, the overall result is a satisfying one. The cake is moist and rich and goes very well with the chocolate fudge. The bananas have infused a little into the cake and make the cake smell great! Hopefully tomorrow it'll taste even better. We finished slightly more than a quarter of the cake and left the rest in the fridge. It was a 9" cake and definitely too big for us. The whole cake making process was a memorable one as it was the first time I did a birthday cake and for myself too. Happy birthday to me!

Happy Birthday! The choc cake must have tasted good with bananas and fudge - I cannot think of a better combination!

Wai Fun, I never joked about food. :) not when it comes to my home made pastes. I am making bai mi jiu this week. by the time I come back from China, I think can use already. I will save a jar of the rice residue for you. You can use it to make Huat kueh. some of KC members get it from me too..to make for their ancestral altar prayers. its free too.
