Finally this was what I cooked for today's lunch, tomato noodles. I've been wanting to try cooking this after tasting the Tomato Noodles at Ajisen. Although the taste didn't turn out exactly the same, it sure tastes good! And very healthy too! My kids love this as it's a little sweet and sour, very appetising!
Tomato Noodles
Ingredients for stock (enough for 5-6 servings)
2 litres Chicken/pork stock
1 kg of tomatoes, remove skin & pureed (I used 12 large ripe tomatoes)
1 tsp salt
Other Ingredients
1 tbsp Tomato ketchup
Noodle/Ramen
Meat of your choice
Big chunks of Tomatos
Button mushroom
Other vegetables of your choice
Method
1. To prepare the stock, pour the tomato puree into the chicken/pork stock and bring to a boil. Season with salt. Turn off the heat once boiled.
2. In a smaller pot, scoop out approximately 400ml of stock to cook the noodles. Stir the tomato ketchup into the stock.
3. Add the meat, mushrooms and other vegetables (except tomatoes).
4. When the stock and ingredients boil, add in the noodles and tomato chunks. Cook till noodles are ready and serve hot.
