Cuppies lesson 6: The sweet taste of success!

I tried the buttercream recipe from Sun Lik yesterday. It turn out a success! Smooth and creamy! I was so thrilled. The 2 girls tested some of the cream and wanted more...lol...I've reduced the sugar so that my buttercream will not be too sweet.

Ready-To-Whip Cream

1400gm Butter
600gm Cream mixture (you'll need to get this from Sun Lik)
900gm Icing Sugar
5 qty Egg white

Method
1. Beat egg white and icing sugar until stiff. Set aside.
2. Beat butter till creamy. Add cream mixture and beat with butter till creamy.
3. Add remaining ingredients together. Beat mixture until it becomes stiff and foaming.
4. Add vanilla or rum essence to flavour whipped cream.

Looks good. Is it easy to pipe and holds the shape?

I find it easy. Holds quite well too, maybe because of the egg whites added. Maybe you can try it & let me know whether it's the same as the usual one you're using.

Yup. Got it from SUn Lik. Will prob use Meringue powder insead of egg white.

Cos the icing looks a little wet from the pictures..

Ur buttercream looks really yummy.
1) is the cream u use the fresh Dairy type or the non-Dairy type?
2) 3 qty egg whites mean egg white from 3 eggs?

Hi Chelsea,
I'm not too sure about the cream mixture coz the ingredients are not stated. It's not those whipping cream we use, it's a special mixture from Sun Lik. It looks a little like shortening, but on a smoother side. And yes, the number of egg whites means you just use the white, excluding the yoke.

Hi Chelsea,

It's in a transparent plastic box and it's call Cream Mixture. Just ask the store assistant there. He/she will be able to get it for you. Let me know how's your buttercream after you try it.

Following your step no.3, Add remaining ingredients together. Beat mixture until it becomes stiff and foaming. Does this step needs a mixer or just by hand?

It seems that my whipped cream cuddles, and when i mixted with my icing colour, it becomes watery.

You have any idea why is it so?

Melinda, I use a mixer for the whole process. Not too sure about the cuddling, you use any cold ingredients? All mine are in room temperature.
